Our take on forgotten skills of the kitchen involve a commitment to getting the best out of our produce with classic techniques like smoking, cheese making, charcuterie, curing, wood firing and pickled treats.
Head Chef Nathan Sasi is passionate about bringing to the table the best expression of these techniques possible.
A regional Australian wine list compliments the nature of the cuisine. Our unique wine list is a showcase of Australian wine from the classically recognised to the weird and wonderful that our skilled grape growers and wine makers are producing.
Smaller regional winemakers will have a Sydney showroom to showcase the best we have to offer. Just like a cellar door, wines will be available for tasting, by the glass or bottle.COMING SOON
